Glazed Carrots Recipe
1 small bag of peeled baby carrots
5 TBS of butter
1/2 Cup of brown sugar
Boil carrots until fork tender. About half an hour. Drain and set aside. Melt together butter and brown sugar. Add the carrots and simmer over low heat 15 minutes or until well-coated. This is another dish that tastes even better after a night in the fridge.
I love glazed carrots! I like to add a little roasted cumin or a few rosemary sprigs. Those ingredients add depth to the sweetness of glazed carrots. And, of course a little grated fresh ginger and chopped fresh coriander adds another dimension entirely.
