Cook with Your Kids and Bless a Family in Need with a Meal

Recently I was invited by Collective Bias to participate in their Cook with Your Kids campaign. The mission was to make a meal together then give it to someone in need. There are a lot of people in need these days. We live in Michigan, and it’s especially tough here with our unemployment rate above the national average.

I went shopping at Walmart with my youngest, Wade, for ConAgra products, and other ingredients for the Sour Cream Chicken Casserole we were making. Then my oldest, David, helped me put the meal together, and deliver it.

Sour Cream Chicken Casserole Recipe:

Ingredients:

PAM

Parkay

8 oz. sour cream

15 oz. can cream of chicken soup

15 oz. can cream of celery

1 large can of stuffing mix

2 lbs. chicken, cooked and shredded

Coat a 9×13 size casserole with PAM to prevent sticking, and for easy clean up.

Melt half a cup of Parkay. Spread half the stuffing mix in the bottom of the pan. Drizzle with half the melted Parkay.

In a separate bowl mix together the sour cream and soups. Spread the soup mixture over the stuffing.

Layer on the chicken. Cover the chicken with the remaining stuffing. Drizzle with the remaining Parkay.

Bake in a 350 degree oven for 30-40 minutes or until golden brown, and bubbly.

We decided to give the meal to the family anonymously, so I packed it in a box and put a note on it. David left it on their porch for them to find when they came home.

I wasn’t worried about refrigeration since it was only 19 degrees outside. I was a little worried it might freeze, and they’d have to let it thaw before they could bake it!

Cooking with your kids is a great way to spend time together, and to pass on your kitchen skills to them.  Being able to bless a family in need felt good, and it was also a great lesson for the boys about helping others.
