On school mornings we’re usually in a rush, and breakfast is something quick like cereal or toast. If the boys get a hot breakfast, it’s something I can microwave.
My oldest son David is home this week on Spring Break, so I took advantage of the extra time in the morning to make an extra special breakfast. This morning we dined on chocolate waffles topped with strawberries, bananas, chocolate syrup and COOL WHIP whipped topping.
Any day the boys get to have COOL WHIP for breakfast is a good day. We all sort of love COOL WHIP in this house. None of us are above just eating it out of the tub with a spoon. Not that I would ever actually do that myself. *Ahem*
Anyway, back to the waffles…
Thanks to that generous dollop of COOL WHIP it looks fancy in the picture, but this is really very simple to make. First, get the topping started by cutting up some fresh strawberries then stir in some sugar. I used about half a pound of strawberries and about a half a cup of sugar. Set aside while you make the waffles.
Chocolate Waffle Recipe
Ingredients
1 1/2 cups flour
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup white sugar
3 tablespoons unsweetened cocoa powder
1 cup milk
2 eggs
4 tablespoons melted butter
Instructions
Oil and pre-heat a waffle iron. In a bowl, mix together flour, baking powder, salt, sugar and cocoa. Add in milk, eggs and butter stirring until mixture is smooth. Cook on a hot waffle iron until golden brown.
Easy enough, right?
Now just top a waffle with some of the strawberry mixture and a few banana slices. You can also drizzle on chocolate syrup. Then finally, make it extra-special by topping it all off with COOL WHIP whipped topping. The kids loved it, because they thought they were having dessert for breakfast.
I loved it because the waffle was really yummy! I skipped the chocolate syrup on mine, and just topped it off with fruit and COOL WHIP. To me it tasted a lot like strawberry shortcake. Which got me thinking about making chocolate strawberry shortcake. I’ll have to try that next. Something else that tastes good topped with COOL WHIP.
If you don’t want to serve Chocolate Waffles for breakfast, you really could use them for dessert. How about a chocolate waffle banana split? Just add a scoop of vanilla ice cream on top along with the fruit, syrup and COOL WHIP. Ice cream and warm chocolate waffles, Mmmm… That’s going on the list of things to make too.
