Meijer Teams Up with Produce for Kids to Help Local Schools {$25 Meijer Gift Card Giveaway}

This fall you can help your local schools simply by purchasing produce when you shop at your local Meijer store.

Meijer and Produce for Kids are teaming up to host the second annual Healthy Schools, Healthy Minds campaign. Now through September 29th  you will contribute to the cause and support your local schools when you purchase fresh fruits and vegetables from the Meijer produce department. Participating fresh fruit and vegetable suppliers will make a donation to DonorsChoose.org based on the amount of their fresh produce items that are purchased during the campaign. The money will go to support local classroom projects.

Look for the Produce for Kids display featuring characters from popular Sprout shows, LazyTown™ and Noodle and Doodle, in the produce section of your Meijer store. The more items you add to your shopping lists, the more local classrooms will benefit!

Meijer is also featuring the Ideal Meals™ program from Produce for Kids in the produce department. Ideal Meals cards provide 12 easy and healthy chef-created complete meal solutions for breakfast, lunch, dinner and desserts. You’ll find recipes like the one below:

Florentine Egg Muffins

Serves 4
Preparation Time: 30 Minutes

Ingredients:

  • ·   1 Tbsp. unsalted butter
  • ·   1 cup mushrooms, sliced
  • ·   ½ cup tomatoes, diced
  • ·   2 cups spinach, loosely packed
  • ·   1 cup red bell peppers, seeded, diced
  • ·   6 large eggs
  • ·   1½ cups grated potatoes, cooked
  • ·   ½ cup shredded mozzarella cheese

Directions:

1. Preheat oven to 400°F.
2. Heat butter in large skillet over medium-high heat; add mushrooms, tomatoes, spinach and peppers. Cook for 5 minutes, or until tender and water evaporates. Remove from heat and set aside to cool.
3. Lightly beat eggs in large mixing bowl. Mix in cooked vegetables, potatoes and cheese. Season with salt and pepper.
4. Line large muffin tin with 8 greased foil cups. Portion ½ cup mixture into each cup.
5. Bake in oven for 10-20 minutes, or until eggs puff and are firm.

    cauliflower…boil it then mix mustard and mayo with pepper, put that all over it, then sprinkle with sharp cheddar and bake for about 10 min! LOVE it.
