Skinny Chocolate Cupcakes


Yesterday I found chocolate milk spilled on the floor in the bathroom by the toilet. Then I found pee on the floor in the kitchen by the table.

How does that happen?!

Never mind.

I don’t want to know.

Ignorance is bliss.

Cupcakes are bliss too, and after a day like that you just really need one. But I don’t need lots of calories. So I whipped a batch of Skinny Chocolate Cupcakes.

The cupcakes have just two ingredients, chocolate cake mix and Sprite Zero. The frosting has just two ingredients also, Cool Whip Lite and Sugar-free Jello Pudding mix. Make a batch of 24, and each cupcake is only 92 calories each.

Now that will improve any day!

My boys loved the cupcakes, and even my husband approved.

Skinny Chocolate Cupcake Recipe


Betty Crocker Super Moist Chocolate Cake Mix (must use Super Moist type)

12 oz of Sprite Zero


Add the Sprite to the cake mix in a large bowl. Mix well until batter is smooth. Divide evenly between 24 cupcake wrappers in cupcake pans. Bake at 350 degrees for 20 minutes.

Skinny Chocolate Frosting

Jello Fat Free/Sugar Free Instant Chocolate Pudding Mix (1.4 oz)

8 oz. Cool Whip Lite


Add Cool Whip to pudding mix in a medium bowl. Beat with a whisk by hand or with a mixer until creamy and smooth. Frost cooled cupcakes.

  1. Oooooh…these look really good! I never knew you could use sprite to make cupcakes until I tried it in cupcake recipe a few weeks ago! I’m going to give this one a try! Stopping in from SITS!
