School starts here in just three weeks. The kids always come home starving in the afternoon. I try to offer them healthy snacks that will keep them satisfied until dinner. I also like to have a variety, because they get tired of eating the same things all the time. I have two new, easy snacks that I’m adding to the rotation this fall.
Apples in a Bag
This is so simple. Just core and slice an apple. Place in a freezer bag. (Make sure it’s the heavier freezer bag type baggie or it will melt.) Add in 1 tsp of sugar, 1/4 tsp of cinnamon, 1/4 tsp of cornstarch and 1 Tbsp of water. Seal the bag and shake to mix everything together. Reopen the bag just a half-inch to vent. Place in the microwave for two minutes. Carefully remove because it will be hot and watch out for the steam when you open it. Pour out into a bowl. It tastes just like warm apple pie without the crust.
Peanut Butter Popcorn
First you need six cups of air popped popcorn in a large mixing bowl. Next place 1/4 cup of brown sugar and 1/2 a cup of real unsalted butter in a microwave safe dish with. Microwave until the butter is melted. Add in 1/4 cup of peanut butter and 1 tsp of salt. Stir until combined. Pour over the popcorn and stir. Work quickly before the mixture cools.
Kids can help you make these snacks or older kids who know how to use the microwave could even make these on their own.
