Chicken Salsa Roll-ups Simple Delicious Super Bowl Snack

The Super Bowl is next weekend. I’m always ready for some football. I’m a fan, not a huge super fan, but I enjoy a good game.

I don’t know all the rules. I mean, my husband yells at the TV about how the coach shouldn’t have done this and the refs were wrong about that, and I have no idea what he’s talking about. But I understand that the team with the ball wants to move it from one end of the field to the other, and the team that doesn’t have the ball wants to stop them. That’s really all you need to know.

I admit to feeling a little meh about the Big Game after Deflategate and all the other stuff that’s gone on in the NFL this year. And good grief, the Patriots again? But I’ll still watch. If nothing else for the commercials. And I’ll eat.Salsa Roll-ups

It’s a school night for the boys, so we just stay home and watch the game. Since we don’t have a big party, I keep the snacks simple, but simple doesn’t mean it can’t be good. One of my favorite easy snacks to make are these Chicken Salsa Roll-ups. They’re always a crowd pleaser when I do take them to a party. They’re also a no-brainer that you can whip up in jut a few minutes.

You just need cream cheese, medium salsa, shredded cheddar cheese, shredded chicken and tortillas. Even if you usually prefer mild salsa, you want to use a spicier version for these. The cream cheese overwhelms a mild salsa, so you need the spice for flavor. Of course, you can always use hot salsa if you like things really spicy. You mix together the filling ingredients then spread it on the tortillas. Roll them up and refrigerate for about an hour. It’s not absolutely necessary to chill them first, but I’ve found they’re easier to slice if you do. Then just cut and serve.rollupmixture

Chicken Salsa Roll-ups Recipe

Ingredients

6 tablespoons medium or hot salsa

8 0z. cream cheese

1 cup shredded cheddar cheese

1 cup shredded or chopped chicken, cooked

4-6 large tortillas

Instructions

Mix together salsa, cream cheese, shredded cheese and chicken. Spread tortillas with mixture. Roll up tortillas and chill for one hours. Cut into one-inch slices.
