When Wade went to kindergarten in the fall, it was the first time in almost 10 years I didn’t have to make lunch for someone else. Well, I pack his lunch and his brother’s in the morning, but most school days I’m home by myself at noon. After all those lunches of grilled cheese, chicken nuggets and hot dogs, I don’t have to serve kid cuisine at 12pm anymore.
I try to eat healthy at lunchtime. Since it’s just me, it’s easier without someone’s peanut butter and jelly sandwich tempting me on the other end of the table. Even all grownup, I can’t resist the comfort of that old childhood standby. I also want something that doesn’t take a lot of fuss in the kitchen or leaves a big mess to clean up. So I east a lot of salads, yogurt and sandwich wraps. But they get kind of boring after a while. I tried some of the light one-serving entres in the freezer section of my grocery store. Most of them either taste like cardboard, are too small to be filling, are low-calorie, but not healthy, or all three.
Then I discovered EVOL. These are frozen meals made with real food.

I tried a lot these, but my favorites by far are the street tacos.
I really like the Chicken and Caramelized Onion and Korean Style Beef and Kimchi. I’ve added these into my regular lunch rotation. Two tacos are one serving. They’re low-calorie but high in protein and big enough to keep me full all afternoon. They’re also easy to make, since they heat up in their own container.

I usually eat scraps for lunch – whatever’s leftover from the night before. Oh, and some tuna lunch kits are always handy. These evol entrees look better than what I usually eat!

I usually have a salad with a scoop of tuna in it or a Greek yogurt and half a sandwich.

I’ve seen these at Target but I’ve never tried them, I should, they look so good! I usually have a quick sandwich or soup from somewhere for lunch.
I usually have a chef salad I make at home for lunch with either a apple or orange.
I don’t really eat meals except for dinner. I just eat when I am hungry and try to eat protein, fruit or a salad. I eat small amounts during the day when I get hungry.
