These White Chocolate Chip Cranberry Oatmeal Cookies are the perfect treat for Valentine’s Day.
Chewy and sweet, the healthy oatmeal and cranberries will trick you into thinking they’re good for you. One of my kids asked, “Mom, can we eat these cookies for breakfast? They have oatmeal in them, so they’re basically a granola bar.” I like his reasoning. I taught him well.
These go great with a glass of milk anytime of day. A batch of these would also make a nice gift for friends and family on Valentine’s Day. But if you want to keep these all for yourself and eat them for breakfast, that’s OK too. I won’t tell.
White Chocolate Chip Cranberry Oatmeal Cookie Recipe
1 cup of brown sugar
1/2 cup of white sugar
1 cup of butter, softened
2 tsps of vanilla
1 1/4 cups of flour
1/2 tsp baking soda
1 tsp of salt
3 cups of quick oats
1 1/2 cups of dried cranberries
1/2 cup of white chocolate chips
Preheat oven to 325 degrees
In a large bowl, cream together butter, sugars and eggs. Add vanilla. Stir in flour, baking soda, salt and oats. Fold in cranberries and white chocolate chips.
Drop by large spoonfuls onto a cookie sheet. Bake for 12 minutes.
